Step 1: To make the base, cream butter and sugar and then add the egg and then fold in sifted flour.
Step 2: Press half of the mixture into a small slice tine and roll out the second half, ready to cover the filling.
Step 3: To make the filling, peel and core apples and slice and cook in 1/2 cup water and lemon juice until tender.
Step 4: Drain and mash roughly, then add sugar, cloves and cinnamon and while mixture is still hot, spoon over base and then cover with the second layer of pastry and bake in a moderate oven for 25 minutes or until cooked.
Step 5: When cool, top with passionfruit icing (if using) and once fully cook slice into squares.
