Step by Step Method

Step 1

Preheat oven to 350F. Lightly spray a 9-inch square baking pan with cooking spray.

Step 2

Peel and slice the apples into medium-size wedges.

Step 3

In a medium bowl, toss the apples with the lemon juice, orange juice, orange zest and ginger. Transfer the apples to the prepared baking pan. Set aside.

Step 4

In a food processor, combine the brown sugar, cinnamon, salt, rice flour, tapioca starch and butter. Pulse until the mixture resembles a crumble. Sprinkle the crumble over the apples.

Step 5

Bake 45 minutes, or until bubbling.

Step 6

Serve topped with vanilla ice cream, or whipped cream, if desired.

I made this recipe twice because I had to make a few changes to it. 3 1/2 pounds apples did not fit in a 9" square casserole so I had to put the prepared apples in 12" casserole dish. I added the prepared topping ingredients and it did not cover all the apples because I had to use the bigger dish. The end result was a gritty topping but the apple mixture was fantastic. I made this again but instead of 3/4 cups rice flour I used 3/4 cups gluten free oats with 1/4 cup rice flour and pulsed this with the other topping ingredients, this made for a tasty gluten free Apple Crisp.

I scaled this back for 2 and made as individual serves and very generous ones at that though I did only use half the amount of brown sugar and did not peel the apples otherwise made as per recipe and cooked for 30 minutes at 175C fan forced and served with some whipped cream for a delicious end to a wonderful meal. Thank you Mikekey, made for Pick Me tag game.
