Preheat the oven to 190C/170C fan forced.
Grease and line a 20cm (base measurement) round cake pan with baking paper.
Using an electric mixer, beat egg whites in a large, dry, clean bowl until stiff peaks form.
Add sugar, 1 tablespoon at a time, beating constantly until mixture is thick and glossy and then beat in egg yolks.
Using a large metal spoon, fold through flour alternately with combined milk, butter and essence, beginning and ending with flour.
Spoon into prepared pan, level surge and arrange apple slices over the top and bake for 30 minutes or until a skewer inserted at centre comes out clean.
Remove from pan and brush hot cake with extra melted butter and serve sprinkled with combined extra sugar and cinnamon.
