Step 1: Preheat the oven to 190C/170C fan forced.
Step 2: Grease and line a 20cm (base measurement) round cake pan with baking paper.
Step 3: Using an electric mixer, beat egg whites in a large, dry, clean bowl until stiff peaks form.
Step 4: Add sugar, 1 tablespoon at a time, beating constantly until mixture is thick and glossy and then beat in egg yolks.
Step 5: Using a large metal spoon, fold through flour alternately with combined milk, butter and essence, beginning and ending with flour.
Step 6: Spoon into prepared pan, level surge and arrange apple slices over the top and bake for 30 minutes or until a skewer inserted at centre comes out clean.
Step 7: Remove from pan and brush hot cake with extra melted butter and serve sprinkled with combined extra sugar and cinnamon.
