Ingredients

The ingredients are:
  • 2 large eggs (separated)
  • 3/4 cup caster sugar (plus 1 tablespoon extra)
  • 1 1/2 cup self-rising flour (sifted)
  • 3/4 cup milk
  • 45 grams butter, melted (plus extra 10 grams)
  • 1/2 teaspoon vanilla essence
  • 1 apple, sliced (green-skinned apple, peeled and cored and sliced)
  • 1/2 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat the oven to 190C/170C fan forced.

  • Step 2: Grease and line a 20cm (base measurement) round cake pan with baking paper.

  • Step 3: Using an electric mixer, beat egg whites in a large, dry, clean bowl until stiff peaks form.

  • Step 4: Add sugar, 1 tablespoon at a time, beating constantly until mixture is thick and glossy and then beat in egg yolks.

  • Step 5: Using a large metal spoon, fold through flour alternately with combined milk, butter and essence, beginning and ending with flour.

  • Step 6: Spoon into prepared pan, level surge and arrange apple slices over the top and bake for 30 minutes or until a skewer inserted at centre comes out clean.

  • Step 7: Remove from pan and brush hot cake with extra melted butter and serve sprinkled with combined extra sugar and cinnamon.
