"Joe Aurelio opened his first restaurant in Homewood, Illinois, in 1959. Since then, his sauce recipe has been a closely guarded secret. This is my attempt to recreate this sauce. Not everyone agrees that beer was used in the sauce, but I believe that beer creates the flavor closest to the original. Thanks to HandsomeG and Gaga at pizzamaking.com for some clues that led to the creation of this recipe. This makes about 5 cups, enough for two pizzas. This is also good served over pasta. Note: this may or may not be vegetarian, depending on how the beer you use is made. Some beers are clarified with isinglass, which comes from fish."

Step by Step Method

Step 1

Combine all ingredients in a saucepan.

Step 2

Bring to a boil over medium-high heat.

Step 3

Reduce heat to medium-low and simmer at least 30 minutes to combine flavors.

Aurelio's is my favorite sauce and pizza in the world. I hope this is a match or close even. One question. What beer do you recommend? There are so many beers and types of beers I'm sure this would greatly affect the outcome. Budweiser vs Guineass for example. Also got any reciepies for their amazing sausage?!?!

Since this is a secret recipe, I knew it had to be good and I was right. It's awesome! I used it to make a thin crust pizza and it is just what I was looking for.
