Step by Step Method
Step 1
In a skillet heat butter and add onions and peppers.
Step 2
Cook until translucent and season lightly.
Step 3
Add curry powder and stir in rice until rice is browned lightly, season to taste.
Step 4
Add chicken broth and raisins, mix and bring to a boil.
Step 5
Cover and simmer for 25 minutes.
Step 6
Remove from heat and let set covered for 5 minutes.
Step 7
Toss lightly and serve.
