  • 2 tablespoons butter
  • 1 cup onions, diced
  • 1 cup green pepper, diced
  • 1/2 teaspoons curry powder
  • 1/2 cup raisins
  • 4 cups chicken broth
  • 14 ounces white rice, dry (2 cups)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: In a skillet heat butter and add onions and peppers.

  • Step 2: Cook until translucent and season lightly.

  • Step 3: Add curry powder and stir in rice until rice is browned lightly, season to taste.

  • Step 4: Add chicken broth and raisins, mix and bring to a boil.

  • Step 5: Cover and simmer for 25 minutes.

  • Step 6: Remove from heat and let set covered for 5 minutes.

  • Step 7: Toss lightly and serve.
