Step by Step Method
Step 1
Preheat oven to 375°F.
Step 2
Cut 4 slices of bacon in half.
Step 3
Cut remaining bacon into 2" pieces.
Step 4
Place all bacon in a 10" oven-proof skillet and cook until crisp.
Step 5
Drain on paper towels, shaping the 8 large pieces into curls.
Step 6
Tilt frying pan to coat with fat.
Step 7
Drain excess fat.
Step 8
Line pan with small pieces of bacon.
Step 9
Beat eggs with flour, 3 teaspoons chives, salt and pepper.
Step 10
Beat in milk.
Step 11
Pour over bacon in pan.
Step 12
Place in oven and bake 35-40 minutes, or until golden and set.
Step 13
Top with bacon curls and remaining chives.
Step 14
Serve in wedges, garnished with tomato wedges.
