Step by Step Method

Step 1

Wash potato thoroughly; cut off any dark marks on the skin and cut about a quarter inch into it completely around it lengthwise.

Step 2

Microwave for approximately 10 minutes on high or until fork tender. Remove to a microwaveable dish, slice it in half through the cut made earlier, score the inside meat.

Step 3

Drizzle the honey over the inside, spread 1 teaspoon on each side and spread 1 teaspoon of butter on each side. Sprinkle with salt and pepper. Place back in microwave and cook for 30 seconds. Enjoy!!

I made this recipe on 10/30/13 for Derf's Cook-A-Thon.I've had mashed and boiled potatoes.But never cooked in a microwave,so this intrigued me. But,this was a very nice change of pace way to make sweet potatoes. The recipe was followed as written,but my potato was small and the 10 minutes made it even smaller( NOTE TO SELF: shorten cooking time if using smaller potatoes :) )Thank you for a very good recipe. I have made these a couple of times and they are delicious! They are so quick to make that they can be done at the last minute in time to have with dinner. I only cooked mine for 4-5 minutes though, as they would have been cooked to a frazzle at 10 minutes in my microwave. Thank you for another great tater recipe Derf. Linda

Quick and easy method for cooking sweet potatoes in a hurry. Cooks up nice and soft and leaves it easy to dress up with cinnamon, brown sugar or Splenda, whatever way someone likes.

Very easy and very tasty. I don't microwave, the sweet potato was huge so I cut it in half longways, put it in a baking dish, covered it with foil and baked at 375f for 45 minutes. I then scored it, added the honey, butter, salt and pepper and continued baking for 15 minutes. Perfect.

Just last week, I made a simple mashed sweet potato side dish (seasoned with only salt, pepper, and butter) that my husband thought was a little "too sweet," so I cut the honey on his and he thought it was "fantastic." His loss. Every other guest loved the presentation, the texture, and the flavors. I was cooking three whole potatoes for five people and wasn't sure about the ten minute timing, but it was perfect. As a side dish to accompany ham steak (garnished with orange marmelade/Dijon) and sauteed fresh corn with bell peppers and green onions, these were colorful and delicious. Simple is good!
