" Wacky " Spice Cake

"I think the name " Wacky " Cake comes from the fact that you don't need milk or eggs for this cake to do it's thing. And that thing is " making it moist and delicious ". Since it doesn't contain any eggs,feel free to let the " kiddos " lick the fork or whisk after mixing (shhhh,you can too. ;) ). I've seen other recipes for this type of cake that add cocoa powder, but I've left out the cocoa and added a small amount of #recipe5151 by Luvcookn.I felt like this worked best with #recipe3266 By Gerry,but if you want to use a Caramel Frosting I bet that would be good too. And if you need a larger cake,just double the ingredients and bake in a 9 by 13 inch pan.You can also use two prepared 8 inch round cake pans if you need a layer cake,just make sure you double ingredients.Just adjust your baking time. Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

In a medium size bowl,sift together first 4 dry ingredients.

Step 3

Make three "wells", in first well, pour in vegetable oil.

Step 4

In the second well, add vinegar, in third well add vanilla.

Step 5

Pour cold water over all and mix well with fork or whisk.

Step 6

Add spice mix and mix well,then taste, if you feel like it needs more spice add another 1/2 teaspoon.

Step 7

Bake in a greased 8 by 8 inch pan for 30 to 35 minutes, or until toothpick inserted near center comes out slightly clean.

I made this for the DH for his smoko breaks (Morning/Afternoon teas) and he enjoyed it and mentioned though the spices smelled very strong they were very pleasant to eat and the cake was a little dense. He does not like iced cakes just plain and we freeze them sliced so he has variety to choose from for instance at the moment he can choose from the spice cake, chocolate, butter, cheesecake or key lime tart and he has offered a variation he would like me to make and that is to add some cinnamon instead of the spice mix and some diced apple to the cake mix so will be trying that soon. My only concern in the baking was that in the instructions it says to sift together the first 5 ingredients but the 5th is oil so I actually added the spice mix thinking it was the 5th dry ingredient but then realized it gets mixed at the end before baking so when I tasted I added a little more spice mix and all in it worked out well and the DH enjoyed. Thank you Chef shapeweaver for another addition to the DH's smoko's and a bonus is it does not need eggs of which we are a little short of at the moment due to supply chain and COVID.

A Billboard Tag that reminded me of a friend's long ago chocolate snack cake coffee hour offering, a dense chocolate brownie like cake that always saw to an empty platter. Made as posted using lovcookn's lovey spice mix which I always keep on hand. As suggested I frosted with my Cream Cheese Frosting. We loved the cream cheese frosting om this spice cake! While the texture was more like a brownie it was good, being easy will likely see me making this again.

I have been making the chocolate version of this recipe since I was 7 years old (almost 60 years) and it has always been my fallback recipe for a quick dessert and a moist snack cake, but this spice version has become my new favorite. I didn't make the frosting, but topped it with some whipped topping. Delicious.

This was a good cake I liked it and it's easy. I love the spice blend to, I made two pans one pan 8x8 would not be enough for our family. I made only one change, I used 7-Up instead of water because it makes better cakes. I will save this and use the recipe again. Thank you
