Good to see you Mary, what better place to ask for a recipe for baked pinepple to go with Easter ham than right here in our Potluck Easter thread! I always make a ham with brown sugar, mustard and pineapple juice. I see Gerry yours uses orange juice. I guess I use pineapple juice, because we usually have a pineapple upside down cake. ;)
Now that I think about it, I forgot that my daughters boyfriend asked for Fried Corn. He had it the last time they came for dinner and he just loved it.
My menu: Ham, Au Gratin Potatoes, Fried Corn, Mushroom Sausage Dressing, Steamed Broccoli, Bergy's Tuscan Style Roasted Asparagus , Deviled eggs, Dinner rolls, and pineapple upside downcake. I might also make a coconut cream pie. (Hubby's favorite pie).

1 (20 ounce) can crushed pineapple, drained
1 cup white sugar
2 tablespoons cornstarch
1/4 cup cold water
2 eggs
1 tablespoon vanilla extract
1 tablespoon butter
1 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
In a mixing bowl, mix together the pineapple, sugar, cornstarch, water, eggs and vanilla. Pour the mixture into the prepared baking dish. Dot the mixture with butter and sprinkle with cinnamon.
Bake in a preheated 350 degrees F (175 degrees C) oven for 1 hour.

Dissie: I love the additions of vanilla and cinnamon, but the appeal of an eggless, lower sugar version is better for me, and we love the contrasting sharp flavor of cheddar and the crunch of Ritz crackers on top.
Thank you both for helping me search. I doubt that I'll get it all together for Easter potlucks, Gerry. I will work on getting one ready to post in the future though. On reflection, I think this must be one of those "Southern" dishes (which many have heard of and never tried).

Sounds like special recipes to me Dissie! Love when I see new recipes that are begging to be made! Next gathering will have to give that Mushroom and Sausage dressing a try as well as one that Mary has.Dissie wrote:We don't have any "special" recipes per say. http://www.recipezazz.com/recipe/southe ... uffing-611 Just about to put my hams in the oven, speaking of ham we often do use pineaple instead of the orange juice, when we do I go with pineapple slices. We love oranges, pineapple and apricots when making baked ham, for taste and presentation!
