Step by Step Method

Step 1

Mix together the flour, salt, sugar and baking powder in medium size bowl.

Step 2

Melt butter in measuring cup, add milk and beaten egg. Add egg mixture to dry ingredients and stir until blended.

Step 3

Pour batter into preheated pan. Makes 5 six-inch fluffy pancakes.

Made the full recipe and got six pancakes which fed 3 of us - the DH had his earlier in the day with honey and lemon juice but the DS and I had our two for dessert with Mikekey's http://www.recipezazz.com/recipe/vanilla-butter-for-pancakes-diabetic-11585 and the two go together like a marriage made in heaven. Delicious! Love these pancakes, not only a great pancake breakfast for two, they are the perfect addition when hosting a weekend morning potluck gathering. No one is really expecting pancakes - but these are so easy that in minutes you have them to the table! I only had 2 teaspoons of baking powder the first time around and they were still fluffy! I was almost tempted to add more milk - but happy I followed through as they came out perfect! Next gathering will make up 2 batches - they are a real crowd pleaser!
