"I love roasted asparagus and this one rates right up there at the top. The recipe was originally from Taste of Home by Janine Fisk modified by me I like my asparagus heated through but still crunchy. If you like yours well done bake longer"

Step by Step Method
Step 1
Place your prepared asparagus on a foil lined baking sheet, single layer.
Step 2
Add tomatoes, pine nuts, salt & pepper.
Step 3
Lightly spray with olive oil
Step 4
Bake in pre heated 450 oven for 7 minutes.
Step 5
Sprinkle on the parmesan cheese and lemon peel
Step 6
Return to oven and continue roasting for an additional 3 minutes or until the asparagus is done to your liking.
