What's Everyone Doing For Easter This Year?
What you are having for your Easter/Brunch/ Dinner/Celebration this year?

Morning Linda!
Easter ... growing up, we were always on vacation. Usually Sarasota FL, where we ended up. But we did take other vacations, Hawaii, Mexico, Colorado (skiing), etc. But, we we got back ... we did celebrate Easter. On vacation, we just ate out where ever.
Once we got back from vacation, it was: baked ham with a brown sugar mustard glaze; baked beans; potato salad; a pickle, olive, veggie relish tray, and pickled herring and shrimp to start; dessert, we rarely had dessert, but if anything - My grandpas rice pudding, warm with a drizzle of heavy cream and cinnamon.
Now, once we moved to FL, I took over Easter. Many times, I continued the same menu; but, I prefer rack of lamb.
I did lamb with a rosemary rub and port wine glaze; roasted figs and onions; mascarpone mashed spuds; asparagus; lemon curd; and often fresh roasted oysters with grilled shrimp and crab to start.
Now, being single w/my son who no longer lives with me ... I will probably just continue the ham dinner.
Dessert is not my thing; so, we rarely had it. It would be light and simple. Nothing much and most of us just had a little if any.
Growing up ... we were not very religious. I guess I should say religious, but did not practice it. Moving to FL, we did go to the Sunrise Service. Beautiful ... ON THE BEACH, watching the sun come up. Really nice. I still try to do that each year.
Brunch or Breakfast ... we were never much of a brunch family. In MI, when everyone woke up - usually early. It was just a nice big breakfast. Nothing special. But we did have Bloody Mary's, and I was allowed a mild one.
Now, when we moved to FL. Breakfast was after the sunrise service. Also, my Dad finally learned that eggs benedict was good.
So: breakfast was eggs benedict with crab or shrimp; on the side was usually a citrus salad and dad had to have his bacon; and always mimosas. And yes, I was 21, so I definitely took part in that.

So this year for dinner: Baked ham, spud salad, baked beans. Breakfast ... probably a poached egg on an english muffin, keep it a bit healthier. Fresh fruit and a Bloody Mary. My son will probably join me for dinner and I will do Sunrise Service if the weather is nice.

I have been known to switch gears at the last minute but I am thinking of having pulled pork if it doesn't, ahem, SNOW. Pork butt and shoulder is kind of like ham, right? ;)
For dessert, I am thinking of making a lemon coconut cake with curd in between the layers. Coconut on top.
For sides, some veggies, whichever catches my eye when I shop on Saturday. For a starch, maybe some potato salad with egg. Asparagus is the likely choice for veggie.
Devilled eggs, I don't know what else.

We are going with ham definitely. My son's choice. That is fine with me ... tradition. Jazzed up baked beans, spud salad and ham. Very classic and simple. Easter wasn't too big with my family, so we were always very simple.

At our house Easter has always made for the gathering of family, life sees to the family growing and it sees to changes. Be they happy or sad come these special days we gather. Some years more some years less and for those who cannot make there are the holiday calls.
Easter is a special time at our house with family travelling in for the weekend, often as early as Thursday. Means being prepared for brunches, lunches and our special Easter meals. Friday has always made for the traditional fish or salmon for our evening meal. The past two years the student does the salmon and the vegetable bake.
Saturday brunch and a day of family time. I assure there is plenty of food and we do the mini potlucks which makes for some great appetizers, meals and desserts.
We have always had a Potluck brunch at our church following the Sunday service. Ham is a great choice!
