Step by Step Method

Step 1

Prepare onions and zucchini as directed. Place on plate and splash with rice vinegar and sesame oil. Toss with your hands to coat. Let sit for several minutes.

Step 2

Add olive oil and butter to skillet and stir fry zucchini and onions. Add soy sauce and pepper to taste. Continue cooking until veggies are caramelized and tender.

Step 3

Garnish if desired and enjoy.

I really did enjoy this. I made this exactly as written and it was so quick and easy to make. I devoured the whole lot on my own and enjoyed every mouthful! Great flavours make the zucchini outstanding. Just the thing for this vegie loving girl!

I just made this for the second time. I cooked it for approx 30 minutes on a higher heat this time. I used a whole large red onion. Yummy!

This takes minutes to prepare and it is so good. I forgot the chives for garnish - I had them all chopped and ready but rushed to take photo and get it hot to the table. Loved the recipe. This adds just the right amount of flavour to a bland Zucchini. Thanks Willow for a "do again" recipe
