  • 4 ounces yellow onion (1/2 onion, thinly sliced)
  • 2 zucchini (small to medium zucchini, quarter each zucchini and then cut each quarter in 3-4 strips)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon vinegar (approx, seasoned rice vinegar)
  • Sesame oil (a few splashes, or more depending on your taste preference)
  • 1 tablespoon soy sauce
  • Black pepper, to taste
  • Toasted sesame seeds, or chives for garnish

How to Make

  • Step 1: Prepare onions and zucchini as directed. Place on plate and splash with rice vinegar and sesame oil. Toss with your hands to coat. Let sit for several minutes.

  • Step 2: Add olive oil and butter to skillet and stir fry zucchini and onions. Add soy sauce and pepper to taste. Continue cooking until veggies are caramelized and tender.

  • Step 3: Garnish if desired and enjoy.
