Step by Step Method

Step 1

Melt vegetable spread or butter in a large deep skillet over medium heat. Add the onions and zucchini. Sprinkle with the curry powder and the cayenne pepper. Cover and cook for 15 minutes, stirring occasionally, until the vegetables are softened and have released some of their liquids. Stir in the chutney, bay leaf, orange juice, raisins, and salt and pepper to taste. Cover and continue cooking for about 10 minutes, stirring occasionally, until the vegetables are tender. Remove the bay leaf. Stir in the cooked rice. Stir in the milk of choice, stirring until well mixed and heated through. Taste for seasoning.

Yum. I love everything in this recipe so I knew that I would love it. I had planned on making a smaller portion for just myself......but family showed up with their likes/dislikes so I tweaked it a little bit. One didn't like curry much (go figure!) so I just used 1T. One wouldn't touch a raisin....so I plumped them up and served them on the side for people to add to their portion if they chose. My raisin hater actually tried a couple because he had never seen (or tried) raisins that were plump and moist. He's now a convert. lol. This was a wonderful side dish that we all enjoyed and I'm so happy to say that my whole family loved it. Thanks for sharing, Nat. It will be repeated for sure.
