Ingredients

The ingredients are:
  • 3 tablespoons vegetable butter spread (such as Earth Balance) or use regular butter
  • 2 medium yellow oinion, coarsely chopped
  • 5 medium zucchini, cut into 1/4-inch slices
  • 1-2 tablespoons curry powder or to taste
  • 1/8 teaspoon ground cayenne or to taste
  • 1/4 cup mango chutney
  • 1 bay leaf
  • 1/2 cup orange juice
  • 1/2 cup golden raisins
  • Salt and pepper, to taste
  • 3 cups cooked jasmine or basmati rice
  • 1 cup soy milk, oat, almond or regular milk

How to Make

  • Step 1: Melt vegetable spread or butter in a large deep skillet over medium heat. Add the onions and zucchini. Sprinkle with the curry powder and the cayenne pepper. Cover and cook for 15 minutes, stirring occasionally, until the vegetables are softened and have released some of their liquids. Stir in the chutney, bay leaf, orange juice, raisins, and salt and pepper to taste. Cover and continue cooking for about 10 minutes, stirring occasionally, until the vegetables are tender. Remove the bay leaf. Stir in the cooked rice. Stir in the milk of choice, stirring until well mixed and heated through. Taste for seasoning.
