Step by Step Method

Step 1

Over high heat heat a skillet or wok and when it is hot add the oil. When oil is hot add the cumin seeds. After a minute or so add the garlic, ginger and chile; stirfry for a minute or so. Stir in tomatoes and cook for 5 minutes, adding water as needed. Stir in beans, cilantro and 1/4 cup water; season with salt.

Step 2

Cover, reduce heat to medium low and cook at a simmer until beans are tender (1 hour); adding more water as needed. Remove chile before serving.
