Ingredients

The ingredients are:
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon cumin seeds
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 jalapeno chile, halved
  • 1/2 pound tomatoes, chopped
  • 1 pounds yard-long beans, ends trimmed and cut into 4 inch lengths
  • 1/2 cup cilantro, chopped

How to Make

  • Step 1: Over high heat heat a skillet or wok and when it is hot add the oil. When oil is hot add the cumin seeds. After a minute or so add the garlic, ginger and chile; stirfry for a minute or so. Stir in tomatoes and cook for 5 minutes, adding water as needed. Stir in beans, cilantro and 1/4 cup water; season with salt.

  • Step 2: Cover, reduce heat to medium low and cook at a simmer until beans are tender (1 hour); adding more water as needed. Remove chile before serving.
