Step by Step Method
Step 1
In stock pot heat butter.
Step 2
Add onion cook until translucent, and season lightly.
Step 3
Add the bay leaf and tomatoes that you crush with your hands with juice.
Step 4
Add a pinch of coffee here before simmering.
Step 5
Simmer on low for 30 minutes.
Step 6
Remove bay leaf before blending.
Step 7
It said strain the soup but why? I think the chunky version would be better.
Step 8
Use immersion blender if you wish.
Step 9
Add seasonings to taste.
Step 10
Mix together.
Step 11
If adding cream, heat the cream before adding to the tomato mixture.
Step 12
And don't boil.
