Step 1: In stock pot heat butter.
Step 2: Add onion cook until translucent, and season lightly.
Step 3: Add the bay leaf and tomatoes that you crush with your hands with juice.
Step 4: Add a pinch of coffee here before simmering.
Step 5: Simmer on low for 30 minutes.
Step 6: Remove bay leaf before blending.
Step 7: It said strain the soup but why? I think the chunky version would be better.
Step 8: Use immersion blender if you wish.
Step 9: Add seasonings to taste.
Step 10: Mix together.
Step 11: If adding cream, heat the cream before adding to the tomato mixture.
Step 12: And don't boil.
