Step by Step Method
Step 1
Put the watermelon chunks in a blender and process until smooth. Pour through a fine-mesh sieve into a bowl. It should make about 3/4 cups of watermelon juice (enough for 4 drinks). Refrigerate.
Step 2
Squeeze the lime to make the juice, but don't discard the rind. Use the rind to rub around the rim of a chilled coupe glass.
Step 3
Fill a cocktail shaker 3/4 full of ice. Place the white rum, lime juice, agave syrup and 3 tablespoons of watermelon juice in the shaker. Shake until combined and frosty, about 15 seconds. Strain into the prepared glass.

- Make sure to use fresh watermelon chunks for the best flavor.
- If you don't have simple syrup or agave syrup, you can substitute honey for a slightly different flavor.
- Substitute honey for the agave syrup - Honey is a great substitute for agave syrup, as it has a similar sweetness and a slightly more robust flavor. The benefit of this substitution is that honey is a more natural sweetener than agave syrup, so it can be a healthier option for those looking for a natural sweetener.
- Substitute vodka for the rum - Vodka is a great substitute for rum, as it has a similar flavor and can be used in many of the same cocktails. The benefit of this substitution is that it can give the daiquiri a slightly different flavor profile and make it more versatile.
Coconut Watermelon Daiquiri Replace the white rum with coconut rum, and the simple syrup with coconut syrup. Add 1/2 teaspoon of coconut extract to the shaker before shaking.
Grilled Shrimp Skewers with Avocado Basil Sauce - This dish is a great accompaniment to the Watermelon Daiquiri, as the sweetness of the sauce complements the light and refreshing taste of the drink. The shrimp also adds a savory flavor that will help balance out the cocktail.
Grilled Pineapple Salsa: This sweet and tangy salsa is the perfect accompaniment to the Watermelon Daiquiri. The pineapple adds a fruity flavor that complements the daiquiri, while the lime juice and cilantro provide a zesty kick that helps to balance out the sweetness.
