"Along w/their pastries, Viennese bakers are world renowned for their classic breads. Vienna bread, w/its light crumb & crisp crust, is the perfect dinner loaf. I sadly do not have the bread-making skills of the Viennese bakers, so I rely on my ABM to get my "perfect dinner loaf". Found at redstaryeastdotcom, their Vienna bread recipe(s) listed ingredients for small, medium & large-sized loaves. I felt the medium-sized loaf would likely be the most favored, so I hope that will work for you & your ABM. ENJOY!"
Have water at 80F & all other ingredients at room temp.
Place ingredients in pan in the order specified in your owner’s manual. Select basic cycle & medium/normal crust.
Ck dough consistency after 5 min of kneading. The dough should be in a soft, tacky ball. If it is dry & stiff, add water 1/2 to 1 tbsp at a time. If it is too wet & sticky, add 1 tbsp of flour at a time.

Tastes great! Mine did not brown on top, just got crispy. Probably my breadmaker and not the recipe. I'll just change the setting next time and hope for a nice brown top. But the flavor is spot on. Thanks for sharing!
