"Along w/their pastries, Viennese bakers are world renowned for their classic breads. Vienna bread, w/its light crumb & crisp crust, is the perfect dinner loaf. I sadly do not have the bread-making skills of the Viennese bakers, so I rely on my ABM to get my "perfect dinner loaf". Found at redstaryeastdotcom, their Vienna bread recipe(s) listed ingredients for small, medium & large-sized loaves. Step by Step Method
Step 1
Have water at 80F & all other ingredients at room temp.
Step 2
Place ingredients in pan in the order specified in your owner’s manual. Select basic cycle & medium/normal crust.
Step 3
Ck dough consistency after 5 min of kneading. The dough should be in a soft, tacky ball. If it is dry & stiff, add water 1/2 to 1 tbsp at a time. If it is too wet & sticky, add 1 tbsp of flour at a time.
NOTE: You can sub Instant (fast-rising) yeast for Active Dry Yeast. For bread machines, use 1/2 tsp Instant yeast per cup of flour in your recipe
