"This came out when I had only 3 potatoes and half a bag of baby carrots to feed 4 people and it worked out great! I made six packets but with my bunch that serves 4."

Step by Step Method

Step 1

Make 6 8 x 8 inch squares of tine foil (I estimate and tear some tin foil in half for two packets).

Step 2

In each square of tin foil, place half of one potato (slices), a few carrots and some chopped onions. top with some mixed herbs, salt and pepper and a bit of butter. Fold tin foil over veggies to form a packet with no exposed edges.

Step 3

Place on grill (I used the back burner on my grill) and cooked for about 30 minutes - the same time I was cooking some steaks.

Step 4

Open packets to serve.

This was a really easy way to make the sides to go with my steak, all on the grill. If you didn't feel like making anything to go with your meat or you didn't want to heat up the kitchen by turning on the oven, it's a great solution. The carrots and onions were really sweet in their own steam. I followed the recipe exactly other than using 1 packet for all of the veggies and subbing olive oil for the butter. I used fresh basil, parsley and oregano from the garden. Didn't really pay attention to the time, starting them when I first lit the grill and pulling them off when the steak was done.

Everthing from the garden. I used fresh sage, oregano & rosemary. Easy to make and delicious to enjoy. I don't BBQ so I made them in a 375 oven for 45 minutes - perfect. This will be a regular veggie side dish. 9 August 15 Made again enjoyed just as much 28 March 16 Enjoyed again. Served along side leftovers from Easter meals

Very tasty taters and veggie recipe. Very easy to put together. Mine took 45 minutes to be cooked through but my veggies were on the thick side.
