Step by Step Method

Step 1

Place lentils, rice. onion, carrot, potato, water and oil in a large heavy pan. Bring to boil. Reduce heat to medium and simmer for about 35 minutes or until the lentils, rice and the vegetables are cooked, stirring occasionally to make sure lentils do not stick to pan.

Step 2

Add butter, cumin, red pepper flakes and lemon juice, Taste for seasoning and add salt and pepper to taste.

Step 3

Serve hot with a wedge of lemon, if desired.

Wonderful soup and goes together in a snap! Served with whole wheat scones (from freezer stash) and had apple cake for dessert. Easy and great meal! Thanks for sharing!

Why have I not made this before now? It is a lovely flavourful soup that will see repeats for sure. Only made one change, I used homemade vension stock for the water. UPDATE 8/24/23: Your soup has been made many many times and as always very satisfying and delicious! Just made another pot today. Thank you Mike for sharing!

This is a good and flavorful soup. Quick and easy to make, also. I cut back on the red pepper as I do on everything. Other than that, I made as directed. I made this for the Pick Me 2020 game in the forums. I liked the rice as a thickener, also. I'm one of those people that try to hurry things along by turning it up too high and burning the bottom. The rice helped me not do that.

This soup is very tasty. I love the addition of rice and potato to the basic lentil soup. There is a reason for listing 1 T. only of the rice. I was thinking it wasn't going to be nearly enough, so I put in 2 heaping T. of rice - which ended up soaking up much of the liquid. No worries, though, I just added more water and it was fine. Great cumin flavor and a hint of spice! Thank you!
