Ingredients

The ingredients are:
  • 250 grams lentils (1 cup red lentils, rinsed and drained)
  • 12 grams long grain rice (rinsed and drained, 1 tablespoon)
  • 1 yellow onion (finely chopped med onion)
  • 1 carrot (cut into small cubes, med carrot)
  • 1 potato (peeled and cut in small cubes, med potato)
  • 5 cups water (hot)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 teaspoon ground cumin
  • 1 teaspoon red pepper flakes
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

How to Make

  • Step 1: Place lentils, rice. onion, carrot, potato, water and oil in a large heavy pan. Bring to boil. Reduce heat to medium and simmer for about 35 minutes or until the lentils, rice and the vegetables are cooked, stirring occasionally to make sure lentils do not stick to pan.

  • Step 2: Add butter, cumin, red pepper flakes and lemon juice, Taste for seasoning and add salt and pepper to taste.

  • Step 3: Serve hot with a wedge of lemon, if desired.
