Step 1: Place lentils, rice. onion, carrot, potato, water and oil in a large heavy pan. Bring to boil. Reduce heat to medium and simmer for about 35 minutes or until the lentils, rice and the vegetables are cooked, stirring occasionally to make sure lentils do not stick to pan.
Step 2: Add butter, cumin, red pepper flakes and lemon juice, Taste for seasoning and add salt and pepper to taste.
Step 3: Serve hot with a wedge of lemon, if desired.
