Step by Step Method

Step 1

In small pot over medium heat bring fruit, apple juice and brandy to a boil, reduce heat and simmer 2 minutes

Step 2

In a large pan, melt butter saute onion and celery until onion is soft

Step 3

Remove casings, crumble sausage add to pan cooking until browned, add in in dried fruit, herbs and nuts cook two minutes

Step 4

Place stuffing mix in a large mixing bowl,add in beaten eggs, chicken broth and sausage mixture, Cool for a several minutes

Step 5

Place turkey breast side down on a sheet of plastic wrap, pound lightly with a mallet until even in thickness, season with salt and pepper,

Step 6

Spread stuffing about 1 1/2 inch thick layer over the turkey breast leaving a half inch on all sides

Step 7

Roll like a jelly roll, place 2 springs of rosemary on top and tie like a rolled roast

Step 8

Place the breast seam side down on a rack or baking sheet. Brush with melted butter, sprinkle with salt and pepper

Step 9

Bake in a 325 oven for 1 1/2 to 2 hours or until thermometer reads 150F/69C. When done remove from oven, cover with foil for 15 minutes

I had a turkey breast that I needed to use from the freezer, and I made it for our Easter dinner for my dh and I. We loved that it was so tender and juicy. Loved the stuffing too! The breast was easy to roll, and it was so worth the extra effort!

What a Wonderful meal this makes! I've had my eye on this recipe for quite a while and I'm so glad I've made it and my family and I really enjoyed it. It is comfort food at its best and special enough for a Holiday meal and to impress your guests. This was the perfect meal to serve on a cold and blustery day and one that I will make again. It was just four of us eating when I made this so I used the breast of one side of a turkey to prepare it. It was a nice plump bird so there was plenty of meat for the four of us. It made a beautiful presentation and was extra delicious with all these great ingredients. My company was impressed and to be honest, so was I!
