Step 1: In small pot over medium heat bring fruit, apple juice and brandy to a boil, reduce heat and simmer 2 minutes
Step 2: In a large pan, melt butter saute onion and celery until onion is soft
Step 3: Remove casings, crumble sausage add to pan cooking until browned, add in in dried fruit, herbs and nuts cook two minutes
Step 4: Place stuffing mix in a large mixing bowl,add in beaten eggs, chicken broth and sausage mixture, Cool for a several minutes
Step 5: Place turkey breast side down on a sheet of plastic wrap, pound lightly with a mallet until even in thickness, season with salt and pepper,
Step 6: Spread stuffing about 1 1/2 inch thick layer over the turkey breast leaving a half inch on all sides
Step 7: Roll like a jelly roll, place 2 springs of rosemary on top and tie like a rolled roast
Step 8: Place the breast seam side down on a rack or baking sheet. Brush with melted butter, sprinkle with salt and pepper
Step 9: Bake in a 325 oven for 1 1/2 to 2 hours or until thermometer reads 150F/69C. When done remove from oven, cover with foil for 15 minutes
