Ingredients

The ingredients are:
  • 4 to 5 pounds turkey breast (2 whole halves boned and butterflied)
  • 1/2 cup dried cranberries chopped
  • 1/2 cup dried apricots chopped
  • 1/2 cup dried or fresh figs chopped
  • 1/4 cup apple juice
  • 1/4 cup brandy
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup butter
  • 1 pound pork sausages (casings removed, all sweet or half pound sweet and half pound hot )
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon sage
  • 1 tablespoon rosemary (or to taste)
  • 1/4 cup chopped pecans or hazelnuts (toasted)
  • 4 cups seasoned stuffing mix
  • 1 cup chicken broth
  • 2 large eggs (beaten)
  • Salt and pepper to taste
  • 2 springs rosemary
  • Melted butter for brushing

How to Make

  • Step 1: In small pot over medium heat bring fruit, apple juice and brandy to a boil, reduce heat and simmer 2 minutes

  • Step 2: In a large pan, melt butter saute onion and celery until onion is soft

  • Step 3: Remove casings, crumble sausage add to pan cooking until browned, add in in dried fruit, herbs and nuts cook two minutes

  • Step 4: Place stuffing mix in a large mixing bowl,add in beaten eggs, chicken broth and sausage mixture, Cool for a several minutes

  • Step 5: Place turkey breast side down on a sheet of plastic wrap, pound lightly with a mallet until even in thickness, season with salt and pepper,

  • Step 6: Spread stuffing about 1 1/2 inch thick layer over the turkey breast leaving a half inch on all sides

  • Step 7: Roll like a jelly roll, place 2 springs of rosemary on top and tie like a rolled roast

  • Step 8: Place the breast seam side down on a rack or baking sheet. Brush with melted butter, sprinkle with salt and pepper

  • Step 9: Bake in a 325 oven for 1 1/2 to 2 hours or until thermometer reads 150F/69C. When done remove from oven, cover with foil for 15 minutes
