Step by Step Method

Step 1

In a bowl, toss shrimp with 1 tablespoon olive oil, salt, black pepper, cayenne and red pepper flakes to taste.

Step 2

Set aside to marinate for 15 minutes at room temperature.( In fridge too, for those of you who are scared)

Step 3

In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat.

Step 4

Add bell peppers, scallions, garlic and seasonings and saute for five minutes or until vegetables are crisp-tender.

Step 5

Stir in tomatoes and saute for 3 minutes or until tomatoes are heated through.

Step 6

Transfer to a platter and cover to keep warm.

Step 7

Add marinated shrimp to skillet.

Step 8

Cook and stir for 2 minutes or until pink.

Step 9

Add to top of veggies.
