Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 8 ounces shrimp, peeled, tails attached
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup yellow bell pepper, sliced thin
  • 1 cup tomatoes, chopped
  • 1/4 cup scallions, minced
  • 1/4 teaspoon ground cumin, to taste
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, minced

How to Make

  • Step 1: In a bowl, toss shrimp with 1 tablespoon olive oil, salt, black pepper, cayenne and red pepper flakes to taste.

  • Step 2: Set aside to marinate for 15 minutes at room temperature.( In fridge too, for those of you who are scared)

  • Step 3: In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat.

  • Step 4: Add bell peppers, scallions, garlic and seasonings and saute for five minutes or until vegetables are crisp-tender.

  • Step 5: Stir in tomatoes and saute for 3 minutes or until tomatoes are heated through.

  • Step 6: Transfer to a platter and cover to keep warm.

  • Step 7: Add marinated shrimp to skillet.

  • Step 8: Cook and stir for 2 minutes or until pink.

  • Step 9: Add to top of veggies.
