Step 1: In a bowl, toss shrimp with 1 tablespoon olive oil, salt, black pepper, cayenne and red pepper flakes to taste.
Step 2: Set aside to marinate for 15 minutes at room temperature.( In fridge too, for those of you who are scared)
Step 3: In a large skillet, heat remaining 1 tablespoon olive oil over medium-high heat.
Step 4: Add bell peppers, scallions, garlic and seasonings and saute for five minutes or until vegetables are crisp-tender.
Step 5: Stir in tomatoes and saute for 3 minutes or until tomatoes are heated through.
Step 6: Transfer to a platter and cover to keep warm.
Step 7: Add marinated shrimp to skillet.
Step 8: Cook and stir for 2 minutes or until pink.
Step 9: Add to top of veggies.
