"There is a tradition to use a wooden spoon in Syrian culture - if you don’t, the story goes that the lentils in your soup won’t cook. They are calling it Assyrian, she used broken up ramen. A good pantry dish for when your broke. It is vegan but could bump up with stock if you have it."

Step by Step Method

Step 1

Dice the onion and carrot and rinse the lentils.

Step 2

Add the olive oil to a large saucepan and gently fry the onion and carrots until the onions are translucent.

Step 3

Then add the lentils and stir using a wooden spoon.

Step 4

Stir in the spices and salt to taste.

Step 5

Add boiling water and noodles, that you have broken up into small pieces stir and leave to simmer on a low heat for half an hour or until the lentils are cooked.

Step 6

Add more water if you prefer a looser soup.

Step 7

Season to taste.

Step 8

Squeeze the lemon into the soup before serving.
