Step 1: Dice the onion and carrot and rinse the lentils.
Step 2: Add the olive oil to a large saucepan and gently fry the onion and carrots until the onions are translucent.
Step 3: Then add the lentils and stir using a wooden spoon.
Step 4: Stir in the spices and salt to taste.
Step 5: Add boiling water and noodles, that you have broken up into small pieces stir and leave to simmer on a low heat for half an hour or until the lentils are cooked.
Step 6: Add more water if you prefer a looser soup.
Step 7: Season to taste.
Step 8: Squeeze the lemon into the soup before serving.
