The ingredients are:
  • 3 tablespoons olive oil
  • 1 cup onion, diced
  • 1 carrot, diced
  • 7 ounces red lentils, (1 cup)
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 4 cups water, boiling
  • 4 ounces vermicelli noodles
  • 1 lemon

How to Make

  • Step 1: Dice the onion and carrot and rinse the lentils.

  • Step 2: Add the olive oil to a large saucepan and gently fry the onion and carrots until the onions are translucent.

  • Step 3: Then add the lentils and stir using a wooden spoon.

  • Step 4: Stir in the spices and salt to taste.

  • Step 5: Add boiling water and noodles, that you have broken up into small pieces stir and leave to simmer on a low heat for half an hour or until the lentils are cooked.

  • Step 6: Add more water if you prefer a looser soup.

  • Step 7: Season to taste.

  • Step 8: Squeeze the lemon into the soup before serving.
