"This is a great recipe if you don't have time on your hands at Christmas, and yes it works! This is an original recipe from the Country Woman's Association Australia. I use a packet mixed fruit containing ~ sultanas, currants, raisins, orange and lemon peel and colored glace cherries. NOTE: I like to use a store bought flavored milk as it is a little sweeter and also half milk and prune juice works well. Serve at room temperature or warm it up and serving with a drizzle of cream or brandy custard is delicious."

Step by Step Method

Step 1

Place the mixed dried fruit into a very large bowl.

Step 2

Add the iced coffee (or liquid substitute) and mix well; cover with plastic wrap and place into the fridge overnight.

Step 3

Preheat oven to 160 degrees celsius (fan-forced). (160 c = 320 degrees fahrenheit)

Step 4

Grease and line a 23cm cake tin with baking paper and set aside.

Step 5

Stir the self-raising flour through the fruit mixture and pour into the prepared pan and smooth batter on top.

Step 6

Bake for 1 hour to 1 hour 30 (see NOTE below)or until a skewer inserted into the center comes out nearly clean but with just a few moist crumbs on it . Set cake aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.

Step 7

NOTE~ Cooking time can vary from anything from 1 hour up to almost 2 hours depending on your oven and if the cake is browning too much place place a sheet of foil loosely over the top.
