Step 1: Place the mixed dried fruit into a very large bowl.
Step 2: Add the iced coffee (or liquid substitute) and mix well; cover with plastic wrap and place into the fridge overnight.
Step 3: Preheat oven to 160 degrees celsius (fan-forced). (160 c = 320 degrees fahrenheit)
Step 4: Grease and line a 23cm cake tin with baking paper and set aside.
Step 5: Stir the self-raising flour through the fruit mixture and pour into the prepared pan and smooth batter on top.
Step 6: Bake for 1 hour to 1 hour 30 (see NOTE below)or until a skewer inserted into the center comes out nearly clean but with just a few moist crumbs on it . Set cake aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.
Step 7: NOTE~ Cooking time can vary from anything from 1 hour up to almost 2 hours depending on your oven and if the cake is browning too much place place a sheet of foil loosely over the top.
