Step by Step Method

Step 1

Grease and preheat your waffle iron according to the manufacturer's instructions.

Step 2

In a large bowl, beat together the egg yolks, buttermilk, butter and oil until well combined.

Step 3

In a separate bowl, sift or whisk together the dry ingredients.

Step 4

Gently stir the dry ingredients into the wet ingredients. Don't beat the batter; it's unnecessary and will make for tougher waffles.

Step 5

Beat the egg whites until stiff. Gently fold them into the batter.

Step 6

Bake the waffles according to your waffle iron's instructions. To keep finished waffles crisp as you continue baking, place them in a preheated 200°F oven, directly on the rack.

Step 7

Yield: about 5 large (7") Belgian waffles; or 7 medium (5") square American-style waffles.

  • Be sure to use room temperature eggs and buttermilk for the best results.
  • Do not use canola oil, as it imparts a strange flavor.

  • Replace buttermilk with plain yogurt: This substitution will result in a more tangy flavor, and the yogurt will also add some probiotics for a healthier waffle.
  • Replace vegetable oil with coconut oil: Coconut oil has a higher smoke point than vegetable oil, which will result in a crispier waffle. Additionally, the coconut oil will add a subtle sweetness to the waffle.

Chocolate Chip Waffles Add 1/2 cup of semi-sweet chocolate chips to the wet ingredients before stirring in the dry ingredients. Bake as directed.

Maple Syrup Glazed Bacon: This sweet and savory combination of maple syrup glazed bacon is the perfect accompaniment to the Best Belgium Waffles Ever. The salty bacon provides a delicious contrast to the sweet waffles, making for a delicious breakfast or brunch.

Scrambled Eggs with Fresh Herbs: Scrambled eggs with fresh herbs make a delicious and nutritious addition to the maple syrup glazed bacon and Best Belgium Waffles Ever.
