Step by Step Method

Step 1

Combine broth, coconut milk, ginger, fish sauce, jalapeño, lime zest and sugar substitute in a large saucepan over medium-low heat.

Step 2

Bring to a low boil, partially cover and simmer for 10 minutes.

Step 3

Add shrimp and mushrooms, if using; simmer until shrimp are cooked through, 3 to 5 minutes.

Step 4

Remove and discard the ginger.

Step 5

Stir in scallions, cilantro and lime juice and serve.

I cut this in half. Made a couple of changes-used sugar instead of Splenda and added 1 teaspoon of Thai red curry paste. Made a delicious light supper. I am going to make again and try Pat’s suggestion of adding soba noodles for a heartier meal.

I did a half recipe and as I was having it for a main dish I added some soba noodles (to give me some carb. to keep my BGL's in check) and thoroughly enjoyed this creamy delicious soup, thank you QueenBea made for Pick Me tag game.
