Step 1: Combine broth, coconut milk, ginger, fish sauce, jalapeño, lime zest and sugar substitute in a large saucepan over medium-low heat.
Step 2: Bring to a low boil, partially cover and simmer for 10 minutes.
Step 3: Add shrimp and mushrooms, if using; simmer until shrimp are cooked through, 3 to 5 minutes.
Step 4: Remove and discard the ginger.
Step 5: Stir in scallions, cilantro and lime juice and serve.
