"Easy recipe for Frito Pie, for those in the know. Frito pie is a dish extremely popular in the Southern, Midwestern, and Southwestern United States, whose basic ingredients are chili, cheese, and corn chips (specifically Frito-Lays). Additions can include salsa, refried beans, sour cream, onion, rice or jalapeños. This recipe is from the restaurant Milagros in the book "Here Today, Gone Tamale" by Rebecca Adler."

Step by Step Method
Step 1
In a large pot, combine ground chuck and garlic. Saute over medium-high heat until meat and garlic are browned and meat broken down into small pieces. (5-7 minutes).
Step 2
Add tomato sauce, diced tomatoes, salt and spices. Stir well, cover and simmer on low for 30 minutes.
Step 3
Add the beans and simmer for 30 minutes more.
Step 4
Stir masa and warm water together until well combined. Mix into the chili and stir well. Allow chili to simmer for 15 more minutes.
Step 5
When ready to serve, have corn chips available to line the bowls and serve the chili over top. Garnish with cheese and onions.
