Ingredients

The ingredients are:
  • 2 pounds ground beef (chuck)
  • 3 garlic cloves, minced
  • 1 can (12 ounce) tomato sauce
  • 1 can (10 ounce) diced tomatoes (recommend Ro-Tel brand)
  • 1/2 teaspoon salt
  • 1 teaspoon ground oregano
  • 1 tablespoon ground cumin
  • 1 can (14 ounce) kidney beans (drained rinsed)
  • 1 can (14 ounce) pinto beans (drained rinsed)
  • 1/4 cup masa harina (or corn meal)
  • 1/2 cup water (warm)
  • 2 bags (10 ounce) corn chips (Recommend Frito-Lays brand)
  • Sharp cheddar cheese (optional)
  • Diced onions (optional)

How to Make

  • Step 1: In a large pot, combine ground chuck and garlic. Saute over medium-high heat until meat and garlic are browned and meat broken down into small pieces. (5-7 minutes).

  • Step 2: Add tomato sauce, diced tomatoes, salt and spices. Stir well, cover and simmer on low for 30 minutes.

  • Step 3: Add the beans and simmer for 30 minutes more.

  • Step 4: Stir masa and warm water together until well combined. Mix into the chili and stir well. Allow chili to simmer for 15 more minutes.

  • Step 5: When ready to serve, have corn chips available to line the bowls and serve the chili over top. Garnish with cheese and onions.
