"From "The Only Texas Cookbook". Elizabeth Gulley says the oldest Mexican restaurant in the United States was San Antonio's Original Mexican Restaurant. It closed in 1960. This just might be the O.M.R.'s original recipe for Tex Mex beef tacos."

Step by Step Method

Step 1

Brown meat in oil. When thoroughly cooked, add the onion, seasonings, and tomato sauce and mix to make the filling. Simmer, covered, for 10 minutes.

Step 2

While you are making the filling, heat taco shells in a 200F oven.

Step 3

Fill hot shells with meat mixture, then top with shredded lettuce and finely chopped tomato.

Step 4

Sprinkle top with grated Longhorn cheese, if desired.
