Step by Step Method

Step 1

Preheat oven to 375 F. Lightly coat a 9x13-inch baking dish with cooking spray.

Step 2

In a large skillet, cook the ground beef over medium heat until completely browned and crumbly. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans. Cook and stir another 10 minutes. Set aside to cool slightly.

Step 3

Transfer the beef mixture to a large mixing bowl. Add the frozen tater tots and about 3/4 of the cheese blend. Stir to combine.

Step 4

Pour about 1/3 of the can of enchilada sauce into the prepared baking dish. Dump the ground beef/tater tot mixture into the dish and spread evenly. Lightly pat so it's an even layer. Pour the rest of the enchilada sauce evenly over the top.

Step 5

Bake for about 40 minutes. Remove from oven and sprinkle the remaining cheese blend over the top. Return to the oven until cheese is melted, about 5 more minutes.

Step 6

Serve with the various toppings so everyone can garnish as they want.

Considering how easy this casserole is to make, it sure is tasty. It makes quite a bit too, so it was more than sufficient for our group of 5 (which includes three 20-something boys with hearty appetites). I checked the casserole about 25 minutes into the baking time, and the top was already quite browned, so it didn't get the extra 5 minutes of baking after I sprinkled the cheese on top. But it was still steaming hot, right from the oven, so the cheese melted quite thoroughly anyway. I'll keep this recipe on hand to make again (and again) in the future. Thanks, dienia b. It's a winner in my home.
