Ingredients

The ingredients are:
  • 1 pound ground beef
  • 1 onion, diced (small 4 ounce) onion)
  • 1 clove garlic, minced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 bag (16 ounce) frozen corn (Mexican-style corn)
  • 1 can (12 ounce) black beans (rinsed and drained)
  • 1 bag (12 ounce) shredded Mexican cheese blend
  • 1 package (16 ounce) frozen tater tots
  • 1 can (12 ounce) enchilada sauce
  • 1/2 cup scallions, chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup tomatoes, chopped
  • 1 cup sour cream

How to Make

  • Step 1: Preheat oven to 375 F. Lightly coat a 9x13-inch baking dish with cooking spray.

  • Step 2: In a large skillet, cook the ground beef over medium heat until completely browned and crumbly. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans. Cook and stir another 10 minutes. Set aside to cool slightly.

  • Step 3: Transfer the beef mixture to a large mixing bowl. Add the frozen tater tots and about 3/4 of the cheese blend. Stir to combine.

  • Step 4: Pour about 1/3 of the can of enchilada sauce into the prepared baking dish. Dump the ground beef/tater tot mixture into the dish and spread evenly. Lightly pat so it's an even layer. Pour the rest of the enchilada sauce evenly over the top.

  • Step 5: Bake for about 40 minutes. Remove from oven and sprinkle the remaining cheese blend over the top. Return to the oven until cheese is melted, about 5 more minutes.

  • Step 6: Serve with the various toppings so everyone can garnish as they want.
