Step 1: Preheat oven to 375 F. Lightly coat a 9x13-inch baking dish with cooking spray.
Step 2: In a large skillet, cook the ground beef over medium heat until completely browned and crumbly. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans. Cook and stir another 10 minutes. Set aside to cool slightly.
Step 3: Transfer the beef mixture to a large mixing bowl. Add the frozen tater tots and about 3/4 of the cheese blend. Stir to combine.
Step 4: Pour about 1/3 of the can of enchilada sauce into the prepared baking dish. Dump the ground beef/tater tot mixture into the dish and spread evenly. Lightly pat so it's an even layer. Pour the rest of the enchilada sauce evenly over the top.
Step 5: Bake for about 40 minutes. Remove from oven and sprinkle the remaining cheese blend over the top. Return to the oven until cheese is melted, about 5 more minutes.
Step 6: Serve with the various toppings so everyone can garnish as they want.
