Step by Step Method

Step 1

In a medium bowl, Whisk one tablespoon water, soy sauce soy sauce, cornstarch, sesame oil and baking soda until combined.

Step 2

Cut steak into 1/4-inch-thick slices, against the grain. Add sliced beef to bowl with the soy sauce mixture. Stir to coat. Let beef set for at least 20 minutes or as long as overnight in the refrigerator.

Step 3

While the beef sits, in a second medium bowl whisk together the stock, rice wine, and oyster or hoisin sauce.

Step 4

When the beef is ready, heat oil in a 12-inch nonstick skillet over medium high heat for one minute. Carefully add beef to the skillet, spreading it into an even layer. Cook, stirring occasionally, until beef is lightly browned on both sides, two to four minutes. Turn off the heat and transfer beef into a large plate.

Step 5

Add sauce mixture, broccoli, and garlic to skillet and return to medium high heat. Cook, stirring occasionally, until sauces thickened, and broccoli is tender, about 5 minutes. Alternatively, you could microwave the broccoli in a glass bowl covered with plastic wrap (holes poked for ventilation) for about one to two minutes, then add cooked broccoli to beef and sauce later.

Step 6

Stir beef and juices from the separate plate back into the skillet and cook for another one minute until fully combined and the sauce is a nice thick glaze. Turn off heat and serve immediately over rice or chow mien.

Step 7

Garnish with red pepper flakes, sliced green onions, or crushed peanuts.
