Step by Step Method
Step 1
Heat 1 tablespoon of the olive oil in a skillet.
Step 2
Stir in the onions & banana, chile pepper (some folks use jalapenos) season lightly.
Step 3
Cook and stir until the peppers have softened, about 5 minutes.
Step 4
Remove them from the skillet and set aside.
Step 5
Add another tablespoon of oil to the skillet and cook the bell peppers and tomatoes until the peppers are soft and the tomatoes have begun to break down, about 5 minutes.
Step 6
Season lightly with all spices.
Step 7
Add the tomato-bell pepper mixture to the hot peppers mixture.
Step 8
Stir in the mashed garlic and caraway seeds.
Step 9
Cook 5 minutes until garlic is softened
Step 10
Spoon the vegetables onto plates or a serving platter.
Step 11
Heat the remaining oil in the skillet.
Step 12
Fry the eggs until the whites are set and the yolks are the desired consistency, about 2 to 3 minutes for runny yolks, 4 to 5 minutes for fully set yolks. (you can cover and baste them adding a tablespoon of water)
Step 13
Place the fried eggs on the vegetable mixture and season to taste with salt, paprika and pepper.
