Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 2/3 cup banana chili pepper, chopped
  • 1 1/2 cups green bell peppers, chopped
  • 1/2 cup onions, diced
  • 2 cups tomatoes, diced
  • 1 tablespoon caraway seed
  • 1/2 teaspoon salt, to taste
  • 1/4 teaspoon paprika
  • 4 eggs
  • 1/4 teaspoon ground black pepper, to taste

How to Make

  • Step 1: Heat 1 tablespoon of the olive oil in a skillet.

  • Step 2: Stir in the onions & banana, chile pepper (some folks use jalapenos) season lightly.

  • Step 3: Cook and stir until the peppers have softened, about 5 minutes.

  • Step 4: Remove them from the skillet and set aside.

  • Step 5: Add another tablespoon of oil to the skillet and cook the bell peppers and tomatoes until the peppers are soft and the tomatoes have begun to break down, about 5 minutes.

  • Step 6: Season lightly with all spices.

  • Step 7: Add the tomato-bell pepper mixture to the hot peppers mixture.

  • Step 8: Stir in the mashed garlic and caraway seeds.

  • Step 9: Cook 5 minutes until garlic is softened

  • Step 10: Spoon the vegetables onto plates or a serving platter.

  • Step 11: Heat the remaining oil in the skillet.

  • Step 12: Fry the eggs until the whites are set and the yolks are the desired consistency, about 2 to 3 minutes for runny yolks, 4 to 5 minutes for fully set yolks. (you can cover and baste them adding a tablespoon of water)

  • Step 13: Place the fried eggs on the vegetable mixture and season to taste with salt, paprika and pepper.
