Step by Step Method
Step 1
Dry chops with paper towels; set aside.
Step 2
Whisk all remaining marinade ingredients together in small bowl. Place marinade in a gallon ziplock bag and add chops, agitating bag gently to distribute marinade equally. Place bag in a shallow container and put in refrigerator, flipping bag every so often to evenly distribute marinade. Marinate for at least 30 minutes, but preferably longer (overnight); if marinating longer, add 1/4 cup light olive oil to the marinade.
Step 3
Preheat grill, making sure to grease (preferably coal bbg, but other is fine either outdoor or in a cast iron grill pan over the stove-top) to very hot or until coals are red. Place chops on grill. For 1-inch thick chop: cook 3 minutes on each side for medium rare, then let rest for 5 minutes before serving. Suggestion to serve over top or side on this site: (Simple Eggplant Spinach Saute)
