Ingredients

The ingredients are:
  • 24 ounces lamb chops, 1-inch thick (4)
  • 1 tablespoon tamari (I think doubling should be fine)
  • 1 tablespoon port wine - (I think doubling should be fine)
  • 1 tablespoon shallots, finely chopped
  • 1 6-inch sprig fresh rosemary, rough chopped
  • 1/2 teaspoon Kosher salt or coarse sea salt
  • 1/4 teaspoon freshly ground black pepper (or to taste)
  • 1/2 cup light olive oil
  • 2 tablespoons flat leaf parsley, chopped

How to Make

  • Step 1: Dry chops with paper towels; set aside.

  • Step 2: Whisk all remaining marinade ingredients together in small bowl. Place marinade in a gallon ziplock bag and add chops, agitating bag gently to distribute marinade equally. Place bag in a shallow container and put in refrigerator, flipping bag every so often to evenly distribute marinade. Marinate for at least 30 minutes, but preferably longer (overnight); if marinating longer, add 1/4 cup light olive oil to the marinade.

  • Step 3: Preheat grill, making sure to grease (preferably coal bbg, but other is fine either outdoor or in a cast iron grill pan over the stove-top) to very hot or until coals are red. Place chops on grill. For 1-inch thick chop: cook 3 minutes on each side for medium rare, then let rest for 5 minutes before serving.
